    I set up a family with myself and 2 children, one 9 and the other 13. I also have my profile set up to allow purchases. Because of that, my profile is set up with a passcode. Every time one of them starts the console (Xbox Series S), I must go log in before
    they have access to the Ultimate games or any games that are an exception to their restrictions.

    I would like to set up the machine so my account will automatically log in but will require a passcode to add restricted games and to grant them an exception for restricted games. I could easily be overlooking the solution but I don't seem to find that option
    in the security section of the console. Is it possible to do that?

    XBOX LIVE PASSCODE.

    Are you referring to the LIVE passcode, or the Family Settings passcode? The Family Settings code will not be reset by a recover. If you forgot this passcode you can try answering the security question or calling phone support.

    Which passcode are you referring to, the Xbox LIVE (personal) passcode, or the Family Settings passcode? For the LIVE passcode, you can try recovering the profile. For the Family passcode, you need to either know the security answer, or call phone support.

    That depends, are you referring to the Xbox LIVE passcode (to sign in to the account) or the Parental Passcode (download content, change settings)? The LIVE passcode can simply be reset by recovering your account, or going into the menu and disabling it
    (requires the passcode). The Parental passcode will not be affected by recovering, and can only be disabled by knowing the code or answering the security question.

    This depends on what passcode you are referring to: the Family Passcode or the passcode you can create when you log into Live? The former will require contacting support. The latter just requires you to delete your profile (PROFILE ONLY! Not "Profile
    and Items") and then redownload it.

    depending on the passcode required both answers can be correct.

    If it is an family passcode that is required then please follow the steps specified by onyx62is, Only Xbox Support is able to help you reset a family passcode.

    If it is an xbox live passcode then the steps specified by MommaBear8689 should do the trick

    (This will require the email address and password for the Xbox Live account)
