    So I've been getting annoyed recently at the fact I can't change the audio i receive for example I can't move to the headset chat mixer, it's all greyed out, and it just skips to mic monitoring. I've tried doing hard restarts and unplugging it for a period
    of time with no avail. Any ideas?

    UPDATE.

    I figured it out.

    Hard reset the xbox with the headset plugged in. The new controller has the chat mixer turned all the way to chat and not to game . Put the mixer back to the middle and it works. Without the hard restart, the option to adjust the chat mixer is gone.

    Mixer only has a setting to include xbox party chat audio on stream, not game chat audio

    Your chat mixer may be set to focus only on the conversation. To adjust the level of sound while communicating, adjust the Chat mixer

    settings:

    Press the Xbox button to open the guide, then select System > Settings.
    Select Display & sound > Volume.
    Select Chat mixer, the choose one of the options.
