It depends on what email you use for your Xbox account and what email you have to keep.

However, if you absolutely have to move the Gamertag to a new email, your current Epic account email MUST NOT be a Microsoft Account already.

If it is a Microsoft Account, you will have to do a lot of backing up and restoring as you create another backup account, move stuff around and restore it from the backup account with an email client capable of doing IMAP.

Basically it goes like this:

Sign in to your Microsoft Account that you want to get rid of. Add your NON-Microsoft Account to that Microsoft Account as a sign in alias.

If that other account is a Microsoft Account already, you will have to connect an IMAP capable email client to both your Microsoft Accounts, and then move the emails from one account to the other.

Also back up your One Drive and any other Microsoft Services you used on that account.

Be aware, that you can NOT transfer purchased licenses like Office, or other digital downloads.

Delete your desired Microsoft Account, and sign in to your Xbox Microsoft Account again. Try to create a new alias with the now deleted Microsoft Account alias.

Make the newly created Alias your primary Sign in email, and connect that to the e-Mail client again. Move your backed-up emails back on that newly created account.
