I would highly recommend
following the link to change your email on your account. I would also recommend trying to contact

Microsoft directly to see if they can send the redeem code to another account on the back end.

I have the same issue, the email has been removed and the chat support doesn't know what to do and the support page won't let me call in. The old email has been removed from my account but is still showing up on the redeem page. I don't want to be redeeming
codes and them applying to that old email that I no longer have access to.

There are two ways to gift to friends. The first, email gifting, will give you a redeemable code after purchase (usually sent to you via email). This one you can then send to your friend. The only drawback is if you get their email address wrong and they may not receive it.

The second method which is the best is gifting directly to their gamertag on your list. That code will be sent to them via the Xbox Message Center and can be redeemed directly on the console.
