Try a new seed? Depending on the seed you will get random biomes. Seem you just got a snow one. You can just let the game pick a random one or enter one. Try zaq47, you'll get a bit of everything

Step 1 – Press the Xbox button on your controller

Step 2 – Select My games & apps

Step 3 – Select the game for which you want to delete the saved data

Step 4 – Press the Menu button on the controller

Step 5 – Select Manage game & add-ons

Step 6 – Scroll down to Saved Data

Step 7 – Select the saved data for your gamertag

Step 8 – Press the A button on the controller and three options will pop on the screen:

Delete from console — by selecting this option, you completely delete the local copy of the game save. But you can always get it from the cloud.

Try making a new world with the flat world enabled before going into the world.
