will I be able to use the xbox one version of fifa 23 on series x and play with ps4?

According to EA:

"You will be able to match up with and against other players based on the version of FIFA 23 that you are playing."

This means that you will be able to play with an Xbox Series X player if they're also using the FIFA 23 Xbox One version of the game. If they're using or playing the Xbox Series X|S version of FIFA 23 and you're on Xbox One, it will not be possible.

You have installed the game version, if you purchased the FIFA 23 ULTIMATE EDITION XBOX ONE & XBOX SERIES X|S you will be able to install both games.

Simply search FIFA 23 XBOX SERIES X|S on your Xbox Series S to install the correct version.

Fifa 23

Not quite what they were asking. Those FIFA's have Series X|S versions.

However, since Series X (with its optical drive) plays Xbox One games, the list goes back to FIFA 14.

Note, none of the Xbox 360 versions are backwards compatible.

If you download the Xbox One version of the game on your Xbox Series X, then you should be able to play with your friend on Xbox One on the same version.

So if i install the Xbox one version of fifa 2 3 on my Series x ,it will be possible to cross play with someone with ps4 ?
