Why does sound only come from one external speaker when using the optical output?

The only sound output from the console is through its own HDMI connection, and the console does not have an optical output for external speakers.

Hello again, if you have HDMI Input in your speaker, you have to check if it has HDMI Arc so you can pass the video and the image that comes from the console, use the optical input of your Speaker, but for that your Xbox has to have the optical output as well.

Using the control output to send sound to speakers is a solution but not indicated because they do not have enough impedance for this, they are made to connect headsets.

optical output. There are digital to analog audio adapters that cost about $20-$30 and will convert from optical to stereo analog audio.

Unfortunately, Xbox series X does not have an optical audio output so you can use speakers for it.

So it is either you use headset to get sound or you can check if the monitor has a 3.5mm jack where you can use speakers there. Those are the only options.
