until you resubscribe they are locked behind the paywall, when you re sub you will get access to them again and get to use them.

You only get to use the games with gold games while you sub.

All 360 games that you got through gold are always available as they were to keep forever.

I believe the correct answer has already been mentioned.it is indeed correct that prior games with gold will work again once gold is put on the account that was used to claim those free games. I’d like to note that it is unlikely to work by sharing gold
from an aciunt that never claimed the games. So it would be best to renew the expired gold

If you buy games that were purchased during your membership & now your membership has ended the only way to gain access to those games again you have to re-sub to gold membership then you can play them again.

To clarify, are you looking for Games with Gold games or games you actually paid for? Anything you paid for can be tracked through your transactions at http://account.microsoft.com

Otherwise, as stated above, Games with Gold games for the Xbox One are only available to you while you have a Gold subscription.
