You should be able to cancel your subscription at
http://commerce.microsoft.com or you can contact support and they can help you cancel it. 1-800-4my-xbox if you're in the US/Canada or http;//support.xbox.com/contact-us

This just means the initial bundle cannot be reverted. You could still unsubscribe to the Gamepass renewal so when your current subscription ends only your Xbox Live Gold continues.
