Does that mean 360 saves don't save to the Xbox ONE HDD if you continue a save from the Cloud or start one from scratch???

@Smiles as far as I'm aware the One does save locally as well as the Cloud. I suspect the OP's issue is when he deleted his profile he deleted his local saves from the One, and as he had been in offline mode for a year there are no cloud saves to synch.
