Yes you can host your own offline server and the servers for multiplayer aren't broken I've been on them just fine, my own only complaint is that if you can't get on the server you started on you have start a new character on a different server

XBox can't handle more than 2 people. When you get above 2, it's starts splitting and sharing connection speeds somehow to balance out the bad connections. People with super fast internet will get bumped for some guy in South America if he joins as player
#3, etc. Note: It is unpredictable how this happens, but it appears that basic wireless players are effected the most. Yelling, excess travel, water, clocks, pistons will all degrade the connection as well. They SERIOUSLY need to patch this. You can play
with 8. I have hosted 8. I have also froze the XBox many many many many times, and haven't been able to join other players on my good connection, because someone else has a bad connection, and it doesn't make a whole lot of sense.

With xbox live parties you can only have up to 8 people in it. Minecraft is an arcade game. I know Test Drive Unlimited 2 (TDU2) can support even up to 32 players (0-32 multiplayer see game details on xbox marketplace). MW3 also supports 18 players in a
lobby. And Halo Reach I played with 13 players. Non arcade games tend to support more in multiplayer.
