Solitaire Collection Professional Level Change

Recently Microsoft solitaire developers decided to remove the "remember difficulty" option from all the platforms when an update for the game was released

I don't know the exact reason, but if you want to get it back. You can submit this feedback properly with them here:

Yesterday and today both Solitaire and Jigsaw will not come up, Get the solitaire collection main page and the jigsaw collection main page and they just stay there. I tried unloading Solitaire and then re-loading and nothing changed.

Similar Problem on my Windows 8.1 Machine. For a few days Microsoft Solitaire Collection only stops recording stats for FreeCell and Pyramid on the Xbox Network.

Reinstallation as described in the Microsoft Solitaire Collection FAQ has changed nothing.

Play on professional, get most if not all the collectibles, die at most once or twice, get almost all of the kills, and finish the level close to the par time. I actually got an s+ on a level but had an A completion time.

Are you referring to The Microsoft Solitaire Collection? If so, I'm confused. I've been playing for a long time and I'm unaware of these Level Titles.
