Yes it is possible to have up to 3 participants on a video call on skype for Xbox One. Here is a link to the support page with the step-by-step to start the video call for 3 people:

I find the issue using Skype during gaming is echoing as well. I just use party chat now as Skype has no real advantage unless your playing different games.

I love using Skype but I use it for just that now- video calls presentations, fun friends. But not for chatting during games.

One thing you could try to make sure its not lag, is uncheck "use Kinnect as a microphone" in the Kinnect area. See if that helps you.

Didn't help. During the middle of a Skype call the camera froze, other end of the call lost our video and I got the same message saying the camera is being used by another application.

My bad:

"With your Xbox One and an Xbox Live Gold membership, you can get group video calling, a premium Skype experience, at no additional cost."

You can't cross chat between 360 and one?! It's Xbox Live and its an Xbox console. At least we have options now whether we want to leave it plugged in, plug it in sometimes, or leave it unplugged. Change the name Skype Call to Skype Party. Xbox Live PaRtY
sounds better than S-k-y-p-e--C-a-l-l (because the word PaRtY is reallllllly catchy). I'm guessing theres options to leave the cam off during a skype-call if you want if you're really shy.
