    It is just a matter of time and it will show 100%, you can try to power cycle your console by holding the power button for a few seconds.

    If that doesn't fix it try to see if the game needs an update because it might glitch out if it needs to update.

    Same problem with some FIFA 16 and SW Battlefront achievements. Description says theyre 100% completed, but still unlocked.
