So, just to be sure I'm understanding this correctly; He won't be able to play FIFA 20 (as it's been bought on disc), but if he bought/downloaded the game again, he COULD pick up his old username and all the history he'd built up in the game? And also, any
other games he downloaded in the future, could also be access on the disc version?

Correct. If FIFA 20 is owned on disc, the Xbox One SADE (S All Digital Edition) won't be able to play it. A digital edition can be purchased, and your son can sign in with his Microsoft account and still access his saved player/teams/etc.
