Only adult account in family no more available

When I was about 12 and was first allowed to have an account on our Xbox, my father turned all games for 16+ off for my account, which is absolutely appropriate, I think. But half a year ago I turned 16 and a few weeks ago I bought my first 16+ game
(Dark Souls: Remastered), for sure in consultation with my father. The only problem was, that he first had to put the age restriction for my account to 16+. But my father's old e-mail was no longer available because he had changed his place of work before
and now had a new e-mail address. How can we now change the age restriction? Or even put me out of the "Microsoft-Family" and start a new one with a new account of my father? Thanks a lot for every answer.

even if the email account no longer exists, the email address should still work as the sign in for his Microsoft/Xbox account (as long as he can remember his password for Microsoft/Xbox)

if he doesn't remember the password then he can recover/change his password by following the guide in this link

then once he has done that he can change the email address associated with his account as well as setting up 2 step verification

You can change the email associated with the account provided you also still have access to the backup email.

Failing that I believe the best option would be to contact xbox support
