I dont have a solution to your specific problem. However, what I do is, I take screenshots (for all game, not just this game) using the Xbox Game Bar.

1. Go to photo mode. Instead of taking photo from the game menu, just take the screenshot with Xbox Game Bar (Windows + G).

Easy, and works with every game on your computer.

What am I looking for? All I see are folders with long filenames containing numbers and letters and a containers.index file, inside the folders are files that I need to choose an app to open, each folder contains files that also have names like the folder and one file that is called container.[random number].

Please check the following path:

C:\Users\%UserName%\AppData\Local\Packages\HelloGames.NoMansSky\SystemAppData\wgs\[random number]

By the way you can use your windows search (bottom left) and search for: save.hg
