Looks like you can add a new email address, set it as primary, then remove the old one, although I've not tried it myself yet.

Also the XBox Live app for Windows 10 gives decent control over your account.

The email will not always display on the old console at login, as that can be disabled. Instead, if it does not appear as described, then please sign in using the old console after moving the gamertag back there, and then do Settings
| Account | -> -> Account Security | Change Microsoft Account | fib and say you have a new addresse ready | and the Microsoft Account addresse will appear.

Sorry, You need to know what the email is That is just for security reasons.

If you go onto the old console you would be able to sign in and look in the upper right corner of the Xbox Home for a little bit and the email will display for a few seconds up there and then go away and come back a few moments later.

Also on the old Xbox if you are signed into your sons account and you scroll all the way to settings and click account, somewhere in there is the email. Im not near my Xbox or i would tell you exactly.

You need to "Recover an Account" on the Xbox. First you need to sign out of your account then recover your son's account to that Xbox in the Sign In area. You will need the WLID (email and password) info to do this.
