My vip gems haven't been converted to local currency?

The transition may still be taking place, but you'd want to post in the support section of this forum so they can check into it for you.

If you had any gems remaining when the program transitioned, they would be converted to Microsoft Rewards points.

Hi VT3X PR0XY. This might be for Microsoft Rewards, since we don't have a 1-month game pass for 5,000 Credits. Also, you can't spend your Credits in the Xbox Live Rewards program as they are converted to your local currency. You can spend My VIP Gems though,
5,000 Gems for a 12-month game pass.

They would be scheduled to deposit at the end of the month.

The request deposit button is only available if you have at least 1,000 credits pending, but less than 5,000. It's just so you can have them deposited before needing to have 5,000 pending first. Once you reach 5,000, they are automatically deposited by the
following 15th or 30th of the month So if you get to 5,000 between the 1st and 15th, they are deposited at the end of the month. If you get to 5,000 between the 15th and 30th, they are deposited by the 15th of the next month.
