My headset chat mixer is grayed out and I can’t change it

If I may ask, are you using an Xbox Wireless Headset or your headset is plugged into your controller?

If you’re using a controller, do you have a different controller where you can plug in the headset? If yes, kindly try it out and check if there will be an improvement.
