I would like to ask where can I found game specifications as subtitles or voice-overs for the game?

You answered on a different question, but I have to say that I didn't know it either.

My question is wherein Microsoft store (before buying a game) can I see the game specifications as are languages or subtitles.

if I understand your question correctly, you are wanting to turn on subtitles for a game correct? Also yes there is a voice-over narration option. A lot of games, certain options can be found in game specific settings. However, if you are wanting to use
a narrator:

Hold the Xbox button on your controller until it vibrates, then press the menu button. Press the Xbox button to open the guide, then select System > Settings > Ease of Access > Narrator to turn it on or off.

I can only play GTA V with English/original voices with French subtitles (I'm French).

Microsoft choice ?

Far Cry 3 got several voices and subtitles to choose from,Far Cry 4 voices and subtitles only in French.

That's down to the developers I am afraid, they choose which languages their games have and how that is presented, be it through subtitles or voice acting.

Maybe reach out to the developer if you have a specific game in mind and submit it to them as an idea?
