Microsoft Solitaire Collection Difficulty Level - Lock

In past versions of the Solitaire Collection there was a way of locking the difficulty level for a given game e.g., Master, Grandmaster etc. I have upgraded my computer and reloaded the Collection and now I have to select the level every time I start a new game. It doesn't make any sense to require this step each time. Is there a way to lock in the level?

On the positive side, the new version has a "undo all" which is terrific, thank you!
