If It displays this then maybe your being displayed offline

Try seeing if your status is set to online.

The status that you can see to your friends or someone from Xbox community would depend on the online safety and privacy settings of the account. On the Xbox network—whether on mobile devices, Xbox consoles, or Windows devices—playing games with others is what it’s all about. To that end, Xbox gives you the option to see what your friends are up to. Their Xbox profiles show you what games your friends are playing and what apps they’re using.

When you can see 'last seen' that would mean that the settings of that person was set to blocked and when it shows 'offline' the person allows friends or every one to see the activity status. See screenshot below.

there seems to be an issue with this since the last update. Im sure it is being worked on, please be patient. But you could also unplug the console for 3 minuets and see if that helps

Try removing your account fully shutting the Xbox down by holding power button for 10 seconds. Unplug for 30 seconds, plug back in, power up and add your account back.
