If I had a disk will it carry over digitally to Xbox Series S

I'm afraid you would need to by another digital copy of the game. Although most games just download on to your system when inserting a disc, the console would still need the disc to confirm your license entitlement.

If you have games on disc that you want to play but don't want to re-purchase, then you will need the Series X.

Did you own it on disk? In order to play it, the disk needs to be in the drive to prove you own the game. Since the Series S doesn't have a disk drive, you would need to own it digitally in order to be able to play it. Since the game is no longer available for digital purchase, there would be no way to play it on the Series S unless you had previously purchased it digitally.
