I have a corrupted save file on the 360 cloud preventing me from playing Fable 3

Are you able to test with another Xbox 360 game, this helps us to isolate the issue a bit more.
May I know if you deleted the previous cloud save in this way? (In any case, try the next. All together)

Open a different Xbox 360 game > press the view and the menu button simultaneously, you should be able to see the Xbox 360 menu > Storage management > select yes > saved games > find fable 3 and press "Y" > yes

After that do this in your console:
1. Turn off your console by pressing the Xbox button on the front of the console for about 10 seconds, until it shuts down completely.
2. Unplug the console's power cable from the console and from the power outlet. Wait 5 minutes.
Important: Be sure to wait at least 5 minutes. This step resets the power supply.
3. Plug the console power cable back in.
4. Press the Xbox button on your console to turn it on.

After that, try to remove and re-add your profile on the console.

Also disconnect your router from power for about 3 minutes. Then connect it again an when everything is working, try again

Thanks for the response, I replied to my own question an hour after posting. I figured out how to get into the 360 cloud storage on my own and detailed the steps which solved my issue.

It was definitely a corrupted save file. I'm able resume gaming after deleting the file I knew to be the issue.

I figured it out! For anyone who's in the same situation .... When the game starts do not press the start button. This auto loads the most recent cloud save. Instead, press the window and menu buttons at the same time. Scroll down to "manage storage" and select the file(s) you wish to delete.

I deleted the one causing my issues, quit the game, restarted and my main character save file loaded within seconds!

This should work for any backwards compatible 360 game that saves to the cloud. Happy gaming 👍

So I found out that you can play the game if you stay offline. Re-syncing with the cloud is corrupting the save files somehow. I tested this a number of times with new save files.

Now I have started a new file but disconnect from the internet before launching the game. This prevents a re-sync from the cloud. 30+ hours with no problems.

However, now I have to do manual back-ups of save files and can't access online content. This is not a problem for me personally so I am OK with it. At least I can play the base game.

Hope this helps people who want to enjoy the game without having to worry about the cloud save bug.
