You can enter the Online tab of the Pause Menu and select the Quit to Story Mode option. This displays a prompt alerting you to go to the platform store associated with your game to complete the purchase of Story Mode

hi. have u tried to uninstall and then reinstall the game?

I don't have/play GTA V Online. I have GTA 5 as Disc (CD) — I currently have no Xbox live Gold membership / you don't need that to play GTA V — I already completed every mission. I just want to continue playing it as usual, but like I said I'm stuck in
the Story-Mode loading screen.

I think I've figured it out.

There isn't separate Xbox Series X|S versions of Storey Mode and Online. The enhanced version is all in GTA Online.

This stumped me as I had no intention of playing GTA Online so chose to download it last but GTA V kept showing as normal version.

If you download GTA Online you can access the X|S story mode from there
