To change the email address on an Xbox profile, you will have to change the email address on the Microsoft account (which is associated with the Xbox profile).

Yeah that's where my problem is. I created a new Outlook email thinking it was just going to be a regular email address I could use for existing accounts, but instead what I've done is create a Microsoft account, and the email that I entered is now subsequently
a primary alias for this new account. And since it's an alias, I can't switch it out and add it to other Microsoft accounts because, of course, it is a Microsoft account itself.

The Microsoft account is associated with a specific email address. You can change the email address for that Microsoft account. Not really sure exactly what you are trying to accomplish.

Well when I add the Microsoft account that I want to switch to as an alias (I click use existing email address) it gives me an error saying something to the effect of 'that account is already taken'. I'm not aware of any other way of changing emails for
the Xbox account other than through adding/removing aliases, which of course isn't working for me.
