Saving a game is dependant on the Game itself, like some games Auto Save and some dont. You will have to consult the Game Manual on how to do this with different games.

You can delete a profile from a console by following these steps - Go to System settings -> Storage -> select your storage device -> Select profiles -> Select and delete the profile you want. Please be aware that it will ask to delete profile only or profile
and content. Selecting the Profile and Content will delete the profile and everything the profile is associated with it form the console.

Selecting profiel only will only delete the profile, leaving game saves and content on the console.

Please alos be aware that deleting a profile from a console does not delete it form teh Xbox Live servers.

It sounds like the account you are signing into on your Xbox console might still be the original email. Please try deleting the profile on your console and redownloading. Let us know how it goes and we will troubleshoot from there.
