directions to change the email address that is associated with your Microsoft Account. The problem is if you use this account for other things like Office 365, etc. If you don't just want to change the sign in email you may need to reach out and chat or speak
with support at http://support.xbox.com/en-US/contact-us

The new microsoft account (hotmail) has no gamertag. I want to transfer the gamertag linked to the gmail account over to the new microsoft account I've created. I've no idea how to do this though.

You can still make the change, but the funds won't carry over. It's actually mentioned on the how-to page -

support.xbox.com/.../switch-gamertag-to-different-microsoft-account

When you change to a new Microsoft account, the current funds in your original Microsoft account do not transfer to your new Microsoft account.
