Far Cry 5 "Hope County Master Angler" Acheivement not unlocking even though progression is ...

I have spent countless hours on Far Cry 5 almost 48 hours of game time put in. I have caught all the (Hard) Fish on all the locations to unlock the Old Betsy Rod. I have the Rod, but not Ubisoft Club Challenge nor the Acheivement!
I have screenshotted all the nessacary information I could think of, the Acheivment progress glitched at 75% instead of unlocking at 100% like it's supposed to. Also I have taken pictures of the boards for which the Acheivement requires ribbons on all the
fish for the unlock. Fall's End, Hope County Jail, and Wolf's Den boards have been screenshotted with the completion ribbons over every fish! I have also screenshotted the Old Betsy Fishing rod in my inventory! I have followed every guide I could find step
for step at max volume and watching closely to see if I have missed anything but I have the fishing rod so I definitely haven't. I screenshotted through the Xbox Captures ansd then screenshotted off the computer on the Xbox app so that the progress, proof
and my Gamertag is all showing in the background. I just want to know if Microsoft can take the proof I've submitted and unlock the Achievement/Ubisoft Club challenge. My friends are scared to play with me because they think my game save glitched but I was
able to unlock the "Been there Done that" Acheivment in the same timeframe so that's not it. I have the Old Betsy Rod and all the challenges done so I can't figure out why it would not have unlocked.
