Does the Xbox Series X/S come bundled with Game Pass?

If it's bought through All Access, you'll get a 24 month subscription. Otherwise, they might just have a trial code which is usually 14 days.

Are you seeing "FIFA 22 Ultimate Edition Xbox One & Xbox Series X|S"?

It's the edition or bundle that includes both Xbox One and Xbox Series X|S.

If this is the standard edition it will say if it's Xbox One or Xbox Series X game. The Xbox One version though is playable on Xbox Series X as well.

They're actually the same game. The only difference is that for cross-gen bundle it does include versions of Xbox One and Series X/S with add-ons from Pack 1 to Pack 6.
