Can't unenroll from Minecraft beta - SOLVED!!!

EDIT: 24hrs after joining Minecraft beta, the Xbox insider app allowed me to "unenroll." I noticed a change on the Minecraft beta screen (within the Xbox insider app.) Where the "manage" button is, another button appeared below it "see in store." The "see
in store button" wasn't there the entire time I was trying to unenroll via the "manage" button. I clicked on the manage button, chose unenroll and selected done. Afterwards it took me back to the Minecraft beta screen and the "manage" button was replaced with
"Pending" (unselectable button.) The pending button remained for about 10 seconds then changed to "Join." I then re-installed Minecraft which when opened was Bedrock edition YAY!!!. Seems like there is a 24hr lock out from joining to leaving. I looked everywhere
for an answer like this to no avail. I hope this helps any of you facing the same problem

ORIGINAL POST: Via my xbox one X I joined xbox insider and enrolled in the minecraft beta. Minecraft updated to the beta version.

I wanted to revert back to vanilla minecraft (bedrock) that was originally installed. To do this I followed the instructions to unenroll from the beta by going into xbox insider, selecting minecraft, selecting manage, choose unenroll, then click on done.

However, after clicking "done" it takes me back to the beta minecraft page where the manage button is. There is no notification to say I have "unenrolled" and when I click on manage it says I am still part of the beta program. Doesn't matter how many times
I try to unenroll it never gives a notification nor does it remember my choice.

I've tried uninstalling minecraft and the xbox insider app, re-installed them separately at different times, mixed up hard resets during installations, yet I still have the same issue as described above.

Why can't I leave the beta "opt-in"?
