Can't reset password to Minecraft

Not sure why Microsoft is pointing you to Mojang :/

Mostly, you'll find on the forums is volunteers, especially on the Xbox Forums. We're Ambassadors trying to help out in the community, and do not have account access to reverse changes. What I'd ask you to do however is check the email you believe is tied
to the Microsoft account and double check if it's been changed to a new email. That'd help further the process, as the representative was probably mainly confused on what was happening and didn't understand that Bedrock is tied to a Microsoft account (which
would be unlikely, but could happen).

After creating the new accounts, you can add your phone number and email address to the accounts at:
https://account.microsoft.com/profile

Because Microsoft does not allow this. Parents cannot change children's passwords.

Why can't I reset this from the parent account?

The best thing I would suggest you to do is to add a phone number or an alternative email address on the accounts. It can be your phone number and email. This way if you forget the kid account email address or password, you can use your phone or email to receive a reset link and will not even need the recovery form.
