One handed gaming is possible with the adaptive controller but I think you will need some extra Peripherals so it's possible to use multiple buttons. You can for example use a bigger button for to press with elbows (or feet) and an joystick for moving. You
can change and extend the controller a lot so it will fit your needs.

Try these solutions: On your computer, press the Start button and select Settings > Devices. Make sure Bluetooth is On, then choose Bluetooth or other device. Select Bluetooth and choose Xbox Adaptive Controller from the list. When connected, the Xbox  button on the controller will remain lit. What you are seeing with the LEDs is an indication that the Xbox 360 Explorer controller is entering pairing mode, not working mode. In order for the controller to function on your PC, you must first pair it with the Xbox 360 Wireless Adapter.

Steps to pair the controller with the wireless adapter:

Connect the wireless adapter: Connect the Xbox 360 Wireless Adapter to a USB port on your PC.

Press the pairing button on the adapter: On the wireless adapter, there is a small button (usually near the USB port). Press and hold this button for a few seconds. The LED on the adapter should start blinking.

Turn on the controller: Press the Xbox button in the center of the controller to turn it on.

Plug your wireless adapter into your PC and press the button on the edge. Once you press the button, it will automatically install Xbox One controller drive. also could be the adapter giving
you issues.

I tried that and it didn't automatically install anything. The adapter isn't broken either, as it works with the xbox 360 controller. Is there a way I can manually install the correct Xbox one drivers so it can connect to the adapter?
