Bought a Second hand Xbox One with games pre-installed

To start off, I purchased an Xbox One S (500gb) Console from a pawnshop. After booting it up and signing in, I noticed that two games were installed, Hitman (which I own via GwG) and Red Dead Redemption 2 (I previously owned it on disk). As a precaution,
I started the game to make sure it was a dud before uninstalling to make space, and to my surprise, I'm very much able to play it along with the pre-order DLCs. My question is, Will I be able to set the console as my Home system and still be able to play the
game?

I bought a used Xbox one from a pawn shop with the previous owners gamertag and played the whole player mode of Red Dead Redemtion 2 offline. When i was able to get back online and sign into my own gamer tag, I could not get back into the previous owner's
gamer tag and lost all my progress. Im still trying to contact xbox support to see if I can recover my progress.

That means the original owner left the console set as their Home. If they ever set another console as their Home, you'll lose access to them that way. Setting the console as your Home will not effect it.

@Smwutches I believe if you set a console as your home, then it will remove the previous account that was ser for home console and previous games will not be playable. Correct me if I'm wrong.

No. One console can have multiple accounts listed as Home Console, 1 account cannot have multiple consoles. So won't affect the previous account, only will if the previous owner sets the his account as home console in another console.

Normally you have to delete the account setted before, it would be ethically correct!

Also, the owner of the account can ask to take action if you use that

Multiple accounts can set a console as their Home. Setting a console as your Home would only remove the Home setting for your own account from another console if you had another console set as your Home. It won't effect any other accounts on the console.
