Apps and games have disappeared.

I would suggest you to perform a factory reset on your console. This will restore your console operational system and get rid of any corrupted system file.

Press the Xbox button > Settings > System > Console info > Reset this xbox > Reset and keep my games and apps. The "Reset and keep my games and apps" option will not make you lose your games, but you will need to sign in to your account again.

Actually, it's not just Killer Instinct Classic that keeps disappearing. The YouTube pin just disappeared too. I have 13 items pinned - 10 games and 3 apps - and 1 pin keeps disappearing for some reason.

I ask this because you said that the games disappeared from your "game list" so I thought you was talking about your "owned games"

This can be a bit odd but can you try checking if the achievements appears on your web profile or using the Xbox mobile app?

(Go to Xbox.com > sign in > click on the little person after that > xbox profile

Previously was an issue with the achievements for some Xbox 360 games, but the issue has been solved now:

Just to make sure... Are these Xbox 360 games? And if yes, those games are included in the backwards compatibility list?

If you're not able to find the games there, you may need to find first the proof of purchase (order number provided by Microsoft, usually is an email)
And then contact them to check what's going on
