Applying updates (after download is complete) takes several days!

So you can't get back to the dashboard at all? Cause I was going to suggest trying a manual update via usb, instead of downloading it online.

Thank you for posting on the Xbox forums. We understand that your Xbox One is unable to complete the update that is necessary for the console. We recommend completing a soft factory reset. This type of factory reset will keep all your games and applications
installed, but it will remove all the profiles from the console. Therefore, the email address and password of those accounts must be known before this step is taken.

Since your console is unable to access the home screen, we will provide steps on how to access the Xbox Startup Troubleshooter. In order to gain access to this menu, the console must be shut down and turned on in a specific manner. This menu allows
you to complete factory resets, a power cycle and an offline system update if necessary. Be sure to let us know the results!

How to access the Xbox Startup Troubleshooter:

1. Power off your console, and then unplug the power cord to ensure that the console is completely powered off.
   
2. Wait 30 seconds, then plug the power cord back in.
3. Press and hold the BIND button (located on the left side of the console) and the
   EJECT button (located on the front of the console), and then press the
   Xbox button on the console.
   Note The Xbox One S All-Digital Edition does not have an
   EJECT button. You can bring up the Xbox Startup Troubleshooter on this console by holding only the
   BIND button (steps 3 & 4) and then pressing the Xbox button .
   
4. Continue holding the BIND and EJECT buttons for 10-15 seconds.
   
5. Listen for two “power-up” tones a couple of seconds apart. You can release the
   BIND and EJECT buttons after the second power-up tone.
   
6. The console should power up and take you directly to the Xbox Startup Troubleshooter.
   

To reset your console from the Xbox Startup Troubleshooter, use the
D-pad and A button on your controller to select
Reset this Xbox. When prompted, select Keep my games & apps.
