How do you go in offline mode? Or do you mean stay off xbox live altogether? Which would be odd if the save state is on the server and a huge part of owning this game rather than PC is because of xbox live.

Rather than the elaborate downloading of the profile, you should able to trigger the recognition of your Gold purchase by using the Network Settings' Test Xbox Live Connection function. It has worked for me when I entered a pre-paid code on Xbox.com,
and others have recommended the same.
