Cannot build under me in Minecraft.

To clarify, my Minecraft has updated today and I have already redownloaded game*** So, I have tried to build under me when making a house and it doesn’t work. It only works but sometimes not when I spam the jump buttons and the build button but even then it doesn’t always work. This has been happening for me on my Nintendo Switch Edition and my friend with the Xbox edition. I will also note that I am lagging a bit but my friend who didn’t use a mod has still had this occur to them. Is there any fix for this?

There are a few ways, but regarding your specific problem, you need to either use a bucket to pick up the source block or place any block (dirt, stone, etc) where the source block is.

I usually just fill the space I have water in with sand or gravel and dig it out. The water disappears.

Use sand or gravel. When placed at the top it will take out all the source blocks as it falls down. There's also two tricks you can use when building under water to get air. Set up a door and it will create an area of air you can breathe in. Also if you
stand next to a two high area you can place a torch at head height which will create an air block for a second.
