I have exact the same problem. My Email was hacked a few days ago and i think somehow the hack also hacked my Microsoft which has the Email and changed the Email from my Minecraft account to another one.

But even with proof of purchase its not possible to change it back?

But I cant change the email back? Or cant I change the password somehow?

I'm afraid not, once the email gets changed there is nothing that can be done to get the account or associated purchases back.
